Our #5 Japanese Carving Knife is made by knife maker Hiro Masui from high quality Hitachi V2 steel. The blade is concave for working on rounded surfaces. The Japanese White Oak handle is ergonomically designed for a comfortable grip, and a metal ferrule is added for strength. Blade length is 2½˝ and overall length is 7¾˝. .
